SOP Corn-fed Chicken


Standard operating procedure for the determination of corn-fed status of chicken meat using the 13C/12C isotope ratio of the protein fraction of the meat


The method, as described, refers only to the protein fraction of the chicken flesh and is not applicable to the chicken skin and lipid extract of the meat. The method has been shown to work on fresh, thawed and frozen chickens, but cooked chicken meat has not been investigated. Preliminary studies, using lean chicken meat without freeze-drying or fat extraction, look promising. However, values differ slightly from those obtained by the procedure described in this SOP and therefore further validation of the lean meat approach is required.
